It seems amazing that Kimball and his elves can keep drumming up subjects for these books, which arrive in the manner of the tides and the moon, but they do…They remain top-form and absolutely terrific for anyone interested in cooking from recipes that always, always work. The reason is simple: Kimball hires good cooks and then treats them like scientistsor factory workers. They test and test again and again and again. Genius in the kitchen arises from baseline competence. In the matter of chickens, this book will provide it.
