    Biography

    DEDE WILSON is a self-taught pastry chef whose specialities include chocolate work and wedding cakes. She has worked professionally for more than ten years as a restaurant pastry chef, bakery owner, caterer, and recipe developer. Currently, Dede's focus is on teaching, baking for private clients, and writing about food in local newspapers and national magazines such as Cook's Illustraated and Pastry Art and Design. She is an active member of the IACP and resides in wester Massachusetts.

    December 04, 2007: This book has it all the ideas, complete and very detailed how to directions, recipes, tricks of the trade and very importantly, the time lines to help you organize the task of making and decorating your masterpiece. It's a great book for a novice such as myself. I will also use this book as a reference for years to come for ideas and inspiration. Don't let the pictures scare you. They look complicated but Dede breaks it all down into smaller components. She inspires confidence and creativity. This is not only an 'ideas' book but also a 'how to' book. Have ordered many books from this Barnes and Noble site. You can't go wrong.

    February 20, 2005: DeDe changed the way I decorate my cakes! I have a small business and was tired of seeing the same old design techniques. I now use real ediable crystallized flowers, and fresh fruit, and work more with chocolate. She makes decorating cakes a work of art, and her recipes are outstanding. The lemon buttermilk is the best I have ever eaten. I will be purchasing her next book.
