      July 22, 2009: This really is a must read for someone diagnosed with celiac or for someone considering a gluten/casein free diet. It provides a technical explanation of how gluten/casein and preservatives/food colorings can contribute to nuerological disturbances. It's the best guide I've read on the subject. It also provides meaningful suggestions for choosing healthier foods, depending on the ailment.
