Dippity-Doo-Dah Oatmeal Cookies

Makes 14-16 cookies

1 cup butter, room temperature

3/4 cup sugar

3/4 cup brown sugar

2 teaspoons vanilla extract

1 egg

11/2 cups flour

1 teaspoon baking soda

1 teaspoon cinnamon

1 teaspoon apple pie spice

1/2 teaspoon salt

3/4 cup dried cranberries or raisins

11/2 cups old-fashioned oats

1/2 cup chopped pecans or walnuts (optional)

Let's start baking!

Preheat oven to 375 degrees F. Line a cookie sheet with foil and spray lightly with nonstick cooking spray. Set aside.
In a large mixing bowl, cream the butter and sugars with an electric mixer. Add vanilla and egg, blending until smooth. Place flour, baking soda, cinnamon, apple pie spice, and salt in a medium bowl and whisk together.

Add flour mixture to the butter mixture and stir together with a large spoon or spatula. Fold in the cranberries or raisins, oats, and nuts, if using.

Drop cookie dough by even heaping tablespoons onto prepared cookie sheet. Leave at least 2 inches between each cookie.

Bake about 15 minutes or until golden brown.

Remove from oven and cool on cookie sheet for 5 minutes before removing and cooling another 10 minutes on a wire rack. Store in an airtight container for up to 5 days.
