Currently, more than 50 medical schools use the first edition as a model in the development and implementation of their own nutrition curriculum. This second edition will provide updated material that includes essential topics based upon the National Academy of Sciences report, Nutrition Education in U.S. Medical Schools. According to the editors, the text is written for those teaching nutrition in a variety of settings, including instructors in undergraduate and graduate programs in dietetics and medical, nursing, and physician assistant programs. It also can be used for more than one course over several years.
