July 16, 2007: I read good things about this book, but I'm sorely disappointed. First of all, the impression that these recipes can be prepared in just minutes is quite misleading. Many of the recipes (particularly those with poultry) have pre-cooked, pre-cubed meats listed in the ingredients. If I don't happen to have a cup of cubed cooked chicken sitting around somewhere, I'm adding an extra 10 minutes to my prep time. I also found a problem with the casserole style recipes. In several cases, the amount of ingredients was simply too much to fit in the size of dish that the recipe required. The result was casserole that overflowed from the dish and took much longer to cook that than specified in the recipe. I could probably excuse the aforementioned problems if the final results had been tasty and satisfying. That was not, however, the case. Most of the recipes were quite lacking in flavor and even doubling the seasoning left something to be desired. My husband has asked me never to use this cook book again.

March 13, 2005: I love this book even more than American Heart Association Quick and Easy Cookbook: More than 200 Healthful Recipes You Can Make in Minutes (see my review under that title also). The meals are quick, easy, and tasty as promised. Also, they are easy to use on the Weight Watchers plan. I still wish they would make a spiral bound version so they would lie flat, and that is why I give four instead of five stars.
